					These lasagna stacks are absolutely packed with protein. The filling is made out of seitan and chickpeas, both of which are extremely high in protein. The roasted veggies in the recipe are bell peppers and onions, but feel free to experiment with other thinly sliced roasted vegetables. Almost anything will taste great here.
