Not only are these crepes vegan, but they are also gluten free! Instead of regular flour, they use a coconut alternative mixed with rice flour. While the recipe says that you are free to use any other non-dairy milk instead of coconut milk, I really recommend coconut milk for crepes. It adds a natural sweetness without having to throw a tonne of added sugar into the recipe.
