A very simple recipe that is incredibly flexible in how you make it. As with most fried rice dishes, you can really mix it up and not follow the recipe to a T if you don’t want to. The main flavor of this dish is obviously the mango sweetness, but the ginger, garlic and crushed coriander seeds all chip in.
